- Store the drink in a glass jar or ceramic jar and then keep it in sunlight or a warm place to ferment naturally. In warm weather, it may ferment in 2-3 days, but in cold weather, it may take around four to five days to ferment.
- Don’t forget to stir at least twice a day.
- Once the kanji turns sour, little pungent and the color becomes like wine, it is ready for consumption.
- You may also serve it with boondi sprinkled on top.
- If you do not have black carrots, you can even use red carrots and beetroots.
